Sweet German/Austrian "Kaiserschmarrn"
Classical German / Austrian "Kaiserschmarrn" how it is served in the Alpine region. It is typically served with sweet apple puree. For a delicious picture, just google "Kaiserschmarrn" :D

Ingredients

2 tablespoons raisins
3 cl brown rum
4 eggs
125 ml milk
120 flour
50 g sugar
1 tablespoon sour cream
salt
50 g ghee
50 g butter
50 g powdered sugar

Instructions

1) Prepare all ingredients and soak the raisins in rum.
2) Separate the eggs and put the egg yolk into a bowl. Put the egg white at a cool place until you need it later.
3) Whisk the yolk with the milk.
4) Add flour, sugar and sour cream with the whisk until you have a smooth dough.
5) Mix egg white and a dash of salt with hand mixer and beat it until stiff.
6) Gently fold the whipped egg white in the dough.
7) Heat up the ghee in a pan and add the dough. Make sure you use a pan which can also be used in an oven.
8) Spread the raisins all over the dough and bake the dough with middle heat until the bottom is golden.
9) Put the pan into the oven with 180 degrees (Celsius) and bake the "Kaiserschmarrn" for about 15 minutes.
10) Cut the "Kaiserschmarrn" into pieces and spread the powdered sugar all over it before you serve the dish.
