POTATO CASSEROLE BY DIANNE BREINER
A delicious easy casserole that replaces the ordinary potatoes. Make 12 servings

Ingredients

MAIN
20 oz pkg Shoestring Potatoes (I've used various hash brown potatoes)
8 ox Sour Cream
1 Can Cream of Chicken Soup (Aldi has the creamiest soup)
1 Onion Chopped
1 Stick of Butter (Cubed)
1 C of Velveeta Cheese (Cubed) ( I use the White cheese - less salt)

TOPPING
1/2 C Melted Butter
2 C Corn Flakes

Instructions

Mix first 6 ingredients, add Salt & Pepper
Put in a 9 x 13 pan or use any aluminum pan
Mix Corn Flakes w/butter and put on top
Cover w/aluminum foil
Bake in a 350 degree oven for about 20 minutes
Remove foil and continue to bake for another 20 minutes
Check to see if center is completely hot!

I usually made a double batch!
