Banana Nut Bread (Jiffy)
I got this recipe off the back of the Jiffy baking mix box in the 1980's. It is fast, easy, and good. Over the years I added my own touches - orange zest and cranberries.
Ingredients
1 c. sugar1/4 c. shortening (For a moister bread use butter - room temperature)
2 eggs
3 crushed ripe bananas = approx 1 to 1 1/3 cups
2 c. Jiffy baking mix
1/3 c. chopped walnuts - optional
2 Tablespoons Orange Zest - optional (I like it better with the zest)
* I also add 1/2 c. craisins (dried cranberries)
Instructions
Cream sugar and shortening. Add eggs and crushed banana. Add Jiffy baking mix and nuts. Stir until well mixed. Pour batter into a well-greased and floured 9"x5"x3" inch loaf pan.Bake about 55 minutes in preheated 350°F oven. Remove from pan. Cool on rack before slicing.
