Meatloaf Italian - Microwave
In 1981 I was the cash office manager in an electronic/appliance store called Circuit City. In order to promote a relatively new home appliance, the microwave oven, the store hired a chef to come in weekly and give free, microwave cooking classes. I loved them! This is one of the first dinners I made in our new microwave oven. It is still the only way I make meatloaf. Here is a fun fact - In 1980, 20 percent of American households owned a microwave.
Ingredients
1.5 Lbs Ground Beef1.5 Cups Soft Bread Crumbs
2 Eggs Beaten
8 oz Can Tomato Sauce
3 Tbsp Chopped Onion
3 Tbsp Chopped Green Pepper
1/2 tsp Garlic Salt
1/2 tsp Oregano
2 oz Jar Sliced Mushrooms (drained)
1/3 Cup Shredded Mozzerella
Instructions
Combine Beef, Crumbs, Eggs, 1/3 Cup Tomato Sauce, Onion, Green Pepper and Seasonings. Mix thoroughly.Form into ring in a 9" pan. Cover with wax paper. Microwave on 70% power for 14 to 18 minutes.
Spread remaining sauce over the top. Arrange mushrooms. Microwave 2 minutes on 70%.
Sprinkle with cheese. Microwave 1 to 2 minutes.
Let stand 5 minutes before serving.
