Chocolate Chex "Puppy Chow"
Bob and Harry were in elementary school at IHM Catholic School (in the 1990's). We were first introduced to "puppy chow" at a bake sale after Saturday mass. It can be a little messy to make but worth it! It stores for a long time in the refrigerator. TIP: Put in a pretty mason jar, add a bow and it is a perfect teacher, neighbor, coach, etc. gift. This one of my most requested recipes.
Ingredients
**9 Cups of any Chex brand cereal (I use Rice/Corn generic Hexagon shaped cereal)1 Cup semi-sweet Chocolate Chips
1/2 Cup Peanut Butter
1/4 Cup (1/2 stick) Butter
1 teaspoon Vanilla Extract
1 1/2 Cups Powdered Sugar (I use about 3 Cups)
**1 box is usually 12 cups. I use entire box and increase the remaining ingredients by 1.5. 1.5 Cups Chocolate Chips, 3/4 Cup Peanut Butter, etc. Although you are increasing the chex by 1/3 we increase the other ingredients by 1/2 because we like the little extra chocolate/peanut butter coating.
Instructions
1. Pour cereal into large bowl and set aside.2. Combine chocolate chips, peanut butter and butter in microwave safe bowl.
3. Microwave on High 1 minute then stir. Repeat until mixture is melted and smooth. Mix in vanilla.
4. Pour chocolate mixture over cereal, stirring until all pieces are evenly coated. Then pour cereal mixture into plastic bag with powdered sugar. Seal bag and shake until all pieces are well coated. (I do this in 3 batches.)
5. Spread on waxed paper to cool.
