Spinach Dip
Ingredients
1 envelope dry vegetable soup mix (Knorr or Lipton) - for bolder flavor I use 2 envelopes8 oz sour cream
1 cup mayonnaise (I use Miracle Whip)
10 oz frozen chopped spinach, thawed and squeezed dry*
8 oz water chestnuts, drained and chopped - optional
* I like my spinach really dry (otherwise it makes the dip watery). I squeeze the thawed, wet spinach as dry as I can with my hands. Then I put it in paper towels - then place it in-between a couple pages of newspaper, and on a countertop press down as hard as you can.
Instructions
In medium bowl, combine all ingredients; chill 2 hours.Serve with your favorite dippers - celery, carrots, green-red-yellow peppers, cucumber, raw broccoli & cauliflower, etc. My sister-in-law Annette puts the dip in a bread bowl & cubes the bread she scooped out as dippers - delicious!
