Salsa - Peach
For the past couple of years we subscribed to Carolina Crate - a service from Lowe's food that weekly put together a crate of locally grown produce. In the summer of 2018 our crates contained more peaches and tomatoes than we could eat. Desperate not to waste the produce I found this recipe for peach salsa. It is fantastic, fresh, and easy to make. It is delicious as a side dish, as a dip with nacho chips, or on fish tacos.
Ingredients
3 large peaches, seeded, peeled and diced (about 3 cups)2 small tomatoes, diced (about 2 cups)
1 medium jalapeno, seeded and diced.
1 cup diced red onion (about 1/2 of a medium red onion)
1/2 cup loosely packed chopped fresh cilantro.
Juice from 1 lime (about 2 tablespoons)
Salt & pepper, to taste.
Instructions
