Pineapple Topping Cake
In the early 1980's my baby brother Eric was dating Carla Chizmadia. Her mother, Geraldine "Gerry" Chizmadia sent a piece of this cake to my mom. Anyone who knows my mom knows she Loves pineapple! Mom got the recipe and has been making it ever since. Most recently was for Brad McIntyre and Becca Sattler-Leja's bridal shower on May 18, 2019. It is a unique, moist and delicious pineapple cake. Easy to make!
Ingredients
20 oz can crushed pineapple (I used pineapple in heavy syrup)1/4 cup water
1/2 cup sugar
2 Tablespoons melted butter
1 small package vanilla pudding (3 oz) - NOT instant
Mix together and pour in a 9" x 13" well buttered and floured pan
Make as directed a yellow cake mix and pour batter over pineapple.
Bake according to package directions.
Instructions
While HOT - loosen edges with a spatula. Put a cookie sheet over cake pan and flip it over. This was a little tricky - use pot holders and hold tight. Slowly lift cake pan. Scrape any pineapple that is stuck in pan with a spatula and place on cake. I had quite a bit of pineapple stuck in the pan, but it came right off and spread easily on the cake.Notes: Gerry Chizmadia is Bryne Wheeler and Marcus Rulli's grandmother.
