Chocolate (White) Covered Peanut Butter & Ritz
My Archdale, NC neighbor, Debbie Deal & I swapped cookies every Christmas. She always had a new cookie in her Christmas gift basket. This simple, no-bake cookie is one of our favorites. You can decorate them (or not) for the occasion. I pipe Thank You (one letter per cookie) on the cookies and arrange them on a tray as a gift for anyone I owe a special Thank You.
Ingredients
Ritz crackers (or other favorite buttery crackers)vanilla almond bark or white-chocolate chips (1 lb will make approximately 25 - 30 cookies)
peanut butter
Optional: sprinkles for decorating
Instructions
Begin making the “sandwiches” by spreading peanut butter atop the flat side of a cracker, and then attaching the flat side of another cracker on top. Repeat with the remainder of the crackers and peanut butter.Then melt your vanilla almond bark (or white chocolate chips) in the microwave or a double boiler. If the chocolate is too thick, feel free to add in a few teaspoons of shortening to thin it out.
Then carefully drop each “sandwich” in the chocolate and submerge or flip it so that it’s fully-coated. Remove with a fork and set on a cookie sheet lined with wax paper, parchment paper, or aluminum foil. Feel free to decorate with sprinkles or drizzle with extra chocolate for decor. Place in refrigerator for a few minutes to harden the chocolate.
