Creamy Broccoli Slaw
After my favorite broccoli slaw at Fresh Market went up to $9.99 lb, I decided to make my own. Broccoli slaw is affordable, nutritious and super easy to make. This is a large recipe - serves 10 -12 people. I make half when it's just Gary and I. If the bag I use is12 oz (and not 16 oz) - I still make 1/2 the dressing.
Ingredients
32 ounces broccoli slaw mixture (found in a bag in the produce section of all grocery stores)1 cup dried cranberries
½ cup sunflower seeds - I use chopped walnuts
(Optional - 1 granny smith apple: Cut granny smith apple into julienne matchsticks or diced. Toss with lemon juice to keep them from browning.)
Dressing
½ cup mayonnaise
2 tablespoons vinegar
1 tablespoon sugar
1 teaspoon celery seed - optional
salt & pepper to taste
Instructions
Mix all dressing ingredients and set aside.Combine all ingredients in a large bowl. Add dressing and toss to combine.
Refrigerate at least 1 hour before serving.
