The Anytime Breakfast


4 Green Peppers
1 medium onion diced
1 Tbls. Butter unsalted
1/2 Lb. Breakfast Tube Sausage
8 Tbls. Jar Salsa Medium
Shredded Chedder Cheese
8 Eggs Large
3 Tbls. Picked Jalapeno Pepper Sliced and Minced
Freshly Ground Pepper


In a large pot add 4 quarts water. Bring to a boil. Cut the tops off the green peppers and seed. Blance the green peppers in a rolling boil for 4 minutes. While blanceing heat a small skillet over medium heat. Add butter and sautee onions and pinch sausage into dime size pieces cook until the sausage is brown. Use tongs to remove the peppers to rest. Beat the eggs and add the jalapenos, onion, salsa, and sausage to the beating eggs. Heat your oven to 350 degrees. Fill the green peppers almost all the way to the top with the egg mixture. Bake for 40 minutes in the over.
