Helens Candy


1 cup buttermilk
2 cups sugar
1 teaspoon baking soda
2 1/2 cups pecans
2 tablespoons unsalted butter
1 teaspoon vanilla


Bring to a boil the buttermik, sugar and baking soda in a largepan for 5 minutes Stirring constantly. Remove from heat, add butter and the pecans. Cook 5 minutes more or to *soft ball stage. Remove from heat and add 1 teaspoon of vanilla. Beat until creamy. drop by teaspoons on wax paper. Cool.

*Soft ball stage: begins at 234° A small amount of syrup dropped into chilled water forms a ball, but flattens when picked up with fingers
