The Deep Fried Fork Chops

Ingredients

4 Center Cut Pork Chops 1/2" thick
1 cup flour
1/2 cup corn starch
1 cup Panko bread crumbs (not regular bread crumbs)
1 egg
Emeril's Bam Spice* (Recipe follows)
cayenne pepper
black pepper
salt
2 tablespoons water

Instructions

In 2 (8"X8") dish beat egg and beat 80 strokes with a whisk. Add water and blend. In the other dish add about
1 cup panko crumbs. Add the flour and corn starch in a brown paper bag and shake to mix. Dry off the chops with paper toweling. Dip in egg mixture and place on a food grate. Sprinkle with the cayenne, black pepper, kosher salt and Emeril's Bam Spice. Place the chops into the flour mix bag and shake to coat. One by one push the chops into the Panko crumbs to coat both sides. Heat the cooking oil to 360 degrees. Allow the chops to sit 10 minutes on the wire rack. Add the chops to the oil. Fry about 4 minutes turning once.

*Emeril's Bam Spice (this makes a fairly good amount. Add for extra spice to most anything)

2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly.
Yield: 2/3 cup
