The Batter Fried Chicken

Ingredients

1 cup all-purpose flour
1 teaspoon baking powder
1 eggs beaten
1 cup milk
2 tablespoons salad oil
salt
Fresh cracked pepper
Soul seasoning
Emeril's Bam Seasoning
Chicken Drumb Sticks and Thighs

Instructions

Simmer to lightly boil the chicken 20-30 minutes in lightly salted water to which a sliced medium onion and a sliced stalk of celer have been added. Remove chicken and drain leaving skin on. (freeze reserved chicken stock for later use). Prewheat deep fryer to 350 degrees. Dip chicken into batter. Place 3-4 pieces at a time into hot oil and cook 10-12 minutes or until golden brown. Drain on paper toweling. Fried chicken may be kept warm in 200 degree onion while additional pieces are being fried.
