Swiss Roll
Ingredients
3 egg yolk2 tbsp sugar
2 tbsp vegetable oil
2 tb milk
1/2 tsp vanilla
1/2 cup cake flour
3 egg white, room temp
1/4 tsp cream of tartar
2 tbsp sugar
Filling:
1/2 cup heavy cream
1 tbsp powder sugar
Instructions
1. Preheat 375F2. Whisk egg yolk, sugar. Add oil, milk, vanilla. Whisk.
3. Sift in flour. Whisk.
4. Clean mixer bowl. Whisk egg whites speed 2 till frothy.
5. Add cream of tartar. Speed 2. Add sugar. Speed 4 till soft peaks.
6. Fold egg whites into batter in 3 batches.
7. Line parchment.
8. Bake 375F 15 min, watch until cake bounces back lightly at finger poke.
9. Remove immediately. Drop cake down at 1' height to prevent shrinkage.
10. Roll in parchment. Rest.
11. Whip cream filling.
12. Roll & chill 6 hours to set.
1 portion - 2 small trays
2 portion - 1 large tray
Chocolate - 2 portions. 3/4 cup flour + 1/4 cup cocoa powder
Coffee - 2 portions. 7/8 cup flour + 1/8 cup expresso powder
Pineapple Upside-Down - 1 portion, subst. milk with pineapple juice
