Sausage Cabbage Soup


1.5 lb mild Italian sausage, loose
1 yellow onion, thinly sliced
2 tsp garlic, chopped
4 carrots, peeled, sliced into ¼” rounds
1 green cabbage, core removed and shredded
3 tomatoes, diced
2 tsp sea salt
ground black pepper
1 tsp ground sweet paprika
8 cups chicken broth


- Brown the sausage at the bottom of a large soup pot over medium high heat, breaking it into small pieces as it browns, remove and set aside.
- Add onions, garlic, carrots, cook over medium high heat, stirring often until tender, about 5 minutes.
- Add cabbage, tomatoes, cook, stirring often, for 5 minutes.
- Mix in remaining ingredients, low simmer for 20 minutes.
