Vanilla Cupcakes with Vanilla Buttercream Frosting

Ingredients

Batter:
1/2 cup unsalted butter, room temperature
2/3 cup granulated sugar
3 large eggs, room temperature
1 tsp pure vanilla extract
1-1/2 cup all-purpose flour
1-1/2 tsp baking powder
1/4 tsp salt
1/4 cup whole milk

Frosting:
1/2 cup unsalted butter, room temperature
4 cup sifted confectioners sugar
1/3 cup whole milk
1 tsp pure vanilla extract
food coloring, optional

Instructions

Preheat oven 350. Line cupcake pan.

Cupcakes:
1. Beat butter, sugar on medium until fluffy. Add eggs one at a time. Add vanilla extract.
2. Separate bowl, whisk together flour, baking powder, salt.
3. Mixer on low speed. Add flour-mixture to butter-mixture, alternate with milk. Mix until no lump.
4. Evenly fill cupcake pan with batter. Make 18-20 min, until a toothpick inserted into the center of a cupcake comes out clean. Remove from oven, let cool on wire rack.

Frosting:
1. Separate bowl, mix butter until fluffy.
2. Add some sugar, alternate with milk and vanilla, until all blended.
3. Add food coloring, mix.
4. Frost.
