Pan Seared Chilean Sea Bass
Ingredients
12 oz sea bass1/4 cup butter
1/2 tbsp minced garlic
Olive oil
Salt
Instructions
1. Fish thaw at room temperature 30 min.2. Pat dry, salt, both sides.
3. Olive oil, medium heat, skin side down, 4 min, cover with lid, 2 min. Flip 2 min, uncover.
Or, if no skin, 4 min each side. Plate.
4. Butter, garlic, simmer. Strain garlic. Pour over fish.
