Drunken Pork Chops

Ingredients

5 - 6 pork chops, bone-in or boneless
1 bottle dark beer - New Belgium 1554
1/2 cup brown sugar
1/3 cup ketchup
Extra virgin olive oil
Salt and pepper to taste

1 Tbsp corn starch
1/4 cup water

Instructions

Put a little bit of oil in bottom of skillet. Season chops with salt and pepper, and brown both sides. While chops are browning, combine beer, brown sugar and ketchup in a bowl. Pour sauce mixture over chops, and simmer for 40-45 minutes.

Remove chops, and thicken sauce with cornstarch and water mixture added to boiling sauce. Whisk to ensure no lumps form. Add chops back to sauce, and flip to coat.

Serve over mashed potatoes or rice.
