Amish Breakfast Casserole
Ingredients
1 lb bacon, diced1 medium sweet onion, chopped
6 eggs, lightly beaten
4 cups shredded hash brown potatoes, thawed
3 1/4 cups cheddar cheese
1 1/2 cups 4% cottage cheese
Instructions
Cook bacon with onion until bacon is crisp.Combine remaining ingredients.
Stir in bacon mixture.
Transfer to greased 13x9 inch pan.
Bake, uncovered, at 350 for 35-40 minutes or until a knife inserted near the center comes out clean.
Let stand for 10 minutes before serving.
