Barbecue Beef Cheese Melts

Ingredients

2 cups biscuit mix
1/2 tsp dry mustard
1 cup milk
1 egg, beaten
1 tsp vegetable oil
1/4 cup chopped onion
1 cup barbecue sauce
3/4 pound cooked roast beef, chopped (I've used ground beef)
2 cups shredded cheddar cheese

Instructions

Heat oven to 350.
Spray 13x9 inch pan with cooking spray.
Stir biscuit mix, mustard, milk and egg until blended; spread in pan.
Bake 15-17 minutes, or until toothpick inserted in center comes out clean. (Don't overbake; top will not be browned).
Heat oil in skillet over medium heat.
Cook onion in oil 3-4 minutes, stirring occasionally, until tender.
Stir in barbecue sauce and beef; cook until hot.
Spread beef mixture over baked bread base.
Sprinkle evenly with cheese.
Bake 4-5 minutes, or until sheese is melted.
Cut into squares.
