Mexican Chicken Alfredo
Ingredients16 oz gemelli or spiral pasta
2 lbs chicken, cubed
1 medium onion, chopped
1/4 tsp pepper
1 Tblsp vegetable oil
30 oz alfredo sauce
2 cups shredded cheddar cheese
1 cup grated parmesan cheese
1 cup medium salsa
1/4 cup 2% milk
4 tsp taco seasoning
InstructionsCook pasta according to pkg directions.
Cook chicken, onion and pepper in oil over medium heat. (I just boil chicken breasts, and use the cooked meat).
Stir in alfredo sauce, and bring to a boil.
Stir in 1 3/4 cups cheddar, parmesan, salsa, milk, and taco seasoning.
Drain pasta, and toss with chicken mixture.
Spread in 13x9 inch pan.
Cover, and bake at 350 for 1 hour.
Sprinkle with remaining cheese.
