Pineapple Cake
Ingredients
CAKE:1 1/2 cups sugar
2 cups flour
1 tsp baking soda
1/2 tsp salt
2 eggs
1 #2 can crushed pineapple, undrained
1/4 cup brown sugar
ICING:
1 1/2 sticks butter
1 cup evaporated milk
1/2 cup sugar
1 tsp vanilla
Instructions
Mix dry ingredients.Add eggs and pineapple; mix well.
Pour into greased 13x9 inch pan.
Top with brown sugar.
Bake at 350 for 30 minutes.
Put all icing ingredients in a sauce pan, and bring to a rolling boil. Time this so that it is close to the time the cake is done.
Pour boiling icing over cake as soon as it is removed from oven.
Allow cake to cool completely before serving.
