Mandarin Chicken
I have found using corn starch, along with all purpose flour gives a crunchier crust on the chicken. I use 1/2 cup all purpose flour, and 1/4 cup corn starch. Stephanie (Borge) Seley

Ingredients

1 Cup finely chopped Tomatoes (Fresh or Canned)
1/2 Cup chopped Onion
1/4 Cup Vinegar
1 1/2 Cups Sugar (can reduce the amount on this)
1 Slice Fresh Ginger, or 1/8 tsp Powdered Ginger
1 Tb Soy Sauce
1/2 Cup Crushed Pineapple, with juice
Salt to taste (I omit this)
Dash of Cayenne Pepper (I usually omit this)
Combine all the above ingredients in a sauce pan and cook, simmering for 20 mins. Then Add:
1/2 Cup Green Pepper, finely chopped
Thicken with Corn Starch Slurry to desired thickness.

BATTER FOR COOKED CHICKEN
1 Egg, beaten
3/4 Cup Cold Water
3/4 Cup Flour
1/2 tsp Salt
1/2 tsp Baking Powder

Instructions

Batter directions: Mix well, but not smooth. Should be lumpy. Dip cooked chicken pieces into the batter and deep fry in hot oil.

The restaurant serves this on shredded lettuce, topped with the Battered Chicken, then the sauce. I serve it on rice.
