Easy Chicken Taquitos

Ingredients

Makes 24 Taquitos

2 cups cooked, shredded chicken
1 can (10 oz) enchilada sauce (I like to use hot or medium)
1 cup shredded cheese, 4 cheese Mexican mix
1/2 cup minced onion
1 can (4 oz) diced green chilies
1 tsp garlic powder
3/4 cup vegetable oil
24 corn tortillas
non-stick cooking spray

Instructions

In a large bowl, combine first 6 ingredients; mix well. Set aside. In a small skillet, heat oil. Using tongs, dip tortillas in the oil about 5 seconds on each side; drain on paper towels. Keep warm. Place 2 tablespoons chicken mixture onto each tortilla; roll tortillas jellyroll fashion. Place seam side down on a cookie sheet sprayed with vegetable cooking spray. Bake 400° F for 15 minutes or until desired crispness.

I got this recipe, Feb. 1998, Ontario, OR. We were living there. The Albertsons grocery store had these made up so we could sample them. They are really good. Be sure and serve with some sour cream as a dip. Stephanie (Borge) Seley
