Mandarin Snowflake Delight (Cake)

Ingredients

1- white cake mix (18 & 1/2 oz)
1- 11 oz can mandarin oranges
3 egg whites
1/2 cup vegetable oil

Ingredients for frosting:
1- 9oz container of cool whip
1- 15 & 1/4 oz can crushed pineapple
1- 3 & 1/2 oz pkg instant vanilla pudding
1 cup flaked coconut

Instructions

For the cake... Preheat oven to 350 degrees,

In a large mixing bowl combine and mix at medium speed for 2 minutes the cake mix, egg whites and vegetable oil. Add the can of mandarin oranges (with the juice) and mix approx 30 seconds. You want to mix in the oranges but not puree them, you want tiny bits of oranges.
Pour into a greased 9x13 pan and bake at 350 for 25-30 minutes. Cool and remove from pan to frost.

For the Frosting... Combine all ingredients in a clean mixing bowl, reserving 1/2 cup of the flaked/shredded coconut. Mix well and frost the cake, top and sides. Sprinkle the remaining 1/2 cup coconut on top of the cake. Enjoy!

This needs to be kept refrigerated.

I cut this recipe out of a newspaper grocery ad in Ontario, Oregon. It was part of a Paul's IGA grocery ad, 1981 or 1982. I have yet to meet anyone who doesn't like this. I am usually requested to make this for our Library fund raiser every year. I get a lot of donations! A couple of years ago someone who works at the Ashley Inn up in Cascade, ID asked if they could use the recipe at the Inn. I said, YES! Stephanie (Borge) Seley
