Peanut Butter Oatmeal Chip Cookies
Ingredients2 c. flour
2 c. oats, quick or old fashioned
1 teaspoon baking powder
1 c. margarine at room temp.
1 c. sugar
1 c. packed brown sugar
2/3 c. creamy peanut butter
2 large eggs
2 teaspoons vanilla
1 1/3 c. chips - chocolate, butterscotch, vanilla, peanut butter, etc.
(I usually use semi-sweet choc. chips)
InstructionsPreheat oven to 350 degrees and have cookie sheets ready. Mix flour, oats and baking powder. In a separate large bowl; beat butter, sugars, peanut butter, eggs and vanilla with electric mixer until well blended. With mixer on low speed, gradually add flour mixture just until blended, add chips. Drop by rounded tablespoons about 2 inches apart on cookie sheets, flatten slightly. Bake about 11 minutes, or until the edges are just lightly browned - centers still soft. Let sit on cookie sheet for 2 minutes before removing to cooling racks.
