Caramel Apple Cake (Stephanie's)
Ingredients4 cups grated or finely chopped apples (approx 6 apples)
2 cups sugar
2 beaten eggs
1/2 cup oil
2 cups flour
2 tsp baking soda
2 tsp cinnamon
½ tsp ground cloves
½ tsp salt
1 cup chopped walnuts
InstructionsAdd the apples to the sugar. Add eggs and oil to apple sugar mixture and stir slowly…
In a separate bowl add and mix together the dry ingredients…
Sift the dry ingredients and add to the wet.
Then add the walnuts, stir well.
Grease and flour a 9 x 13 pan. Bake 350 degrees for 45 minutes. Top with warm caramel sauce, (see recipe below)
• 1/2 cup light brown sugar, packed
• 1/4 cup butter
• 1/4 cup heavy cream
• 1 teaspoon vanilla
Combine brown sugar, butter, and cream in a heavy saucepan over medium heat; bring to a boil. Reduce heat to a simmer; continue cooking and stirring for 5 minutes. Remove from heat and stir in vanilla. Pour caramel topping over hot apple cake.
I have to say I prefer the hot butter sauce that goes with Aunt Melba's apple cake on my recipe of apple cake, even better than the caramel sauce.
I've had this recipe for almost 30 years now. It's a fantastic cake even without the caramel sauce poured over it. Even better the second day. Stephanie (Borge) Seley
