Escarole Soup W/ Meatballs

Ingredients

Use 2-3 cartons of chicken broth ( Progresso or College Inn )
Or.....
Homemade Chicken soup (place whole chicken in pot of cold water after discarding items inside )add onions and bring to boil.. then lower to simmer... you can add celery and carrots... season with pepper and parsley...cook for 1 1/2 or 2 hours... remove chicken and use colander to strain broth


Instructions

Take 3 or 4 heads of fresh escarole.
Clean thoroughly by immersing in large pot of cold water then strain... repeat until clean...bring fresh water to boil and place escarole in boiling water cook only 5-7 mins.
Remove from water and strain in colander Add to chicken broth


Meatballs :

Take one package of ground veal
Add garlic powder, black pepper and grated cheese.
Make tiny meatballs
Add small amt. of olive oil to pan and brown meat in oven at 350 degrees for at least a half hour
They will cook thoroughly when added to prepared soup.
