Quiche Lorraine

Ingredients

Pastry for "9" One Crust Pie
12 slices of bacon crisply fired and crumbled
1 cup shredded natural swiss cheese (4oz.)
1/3 cup finely chopped onion
4 eggs
2 cups half and half (milk)
3/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. cayenne red pepper

Instructions

Prepare pastry
Sprinkle bacon, cheese and onions in pastry lined pie plate.
Beat eggs slightly,
Beat in remaining ingredients
Pour egg mixture into pie shell
Cook uncovered
425 degrees 15 minutes

Reduce temp to 300 degrees
Cook uncovered until knife inserted in center comes out clean ( about 30 mins)
Let stand 10 mins before cutting.


Chicken Quiche >>>> Substitute 1 cup cut up cooked chicken for the bacon and 1/2 tsp. dried thyme leaves for the red pepper

Deviled Ham Quiche >>>> Substitute 2 cans deviled ham for bacon.... mix the ham with 1/4 cup bread crumbs
decrease half and half to 1 1/2 cups.
