Shrimp Creole

Ingredients

6 slices bacon cut into 1/2 " pieces
2 medium onions (finely chopped)
2 medium green peppers (finely chopped)
1 garlic clove (minced)
1 can tomatoes (16oz.)
1 lb. peeled and deveined shrimp
3 cups hot cooked rice.

Instructions

In large sauce pan fry bacon till crisp
Remove and discard all except 2 tablespoons drippings from bacon
Add onions, peppers and garlic
Saute until tender, stirring occasionally.
Add tomatoes and cook uncovered until thickened
Add shrimp and continue cooking until shrimp turns pink
Stir in bacon
Serve over rice...
