Tomato Pie
Ingredients
1 9-inch pie shell1/2 yellow or red onion, chopped
3-4 tomatoes, cut in half horizontally, squeezed to remove excess juice, roughly chopped (approx. 3 cups)
1/4 cup sliced basil (about 8 leaves)
2 cups grated cheese (combination of sharp cheddar and jack or Gruyere or Mozarella)
3/4 cup mayonnaise
1 teaspoon of Hot Sauce (Frank's or Tabasco)
Salt and fresh ground pepper
Instructions
Preheat oven to 350 degrees. Place pie shell in oven and copok 8-10 minutes or longer until light golden.Squeeze as much moisure as you can out of chopped tomatoes using either paper towels.
Sprinkle the bottom of the pre-baked pie shell with chopped onion. Spread the chopped tomatoes over the onions. Sprinkle basil over the tomatoes.
Mix the grated cheese, mayonnaise, hot sauce and a sprinkle of ground pepper. Spead over tomatoes.
Place in oven and bake until brown and bubbly, anwhere from 25-45 minutes.
