Grilled Portobello Mushroom Burgers
Ingredients
4 portobellow mushroom caps, stems removed and gills scooped out1/4 cup balsamic vinegar
2 tablespoons olive oil
1-1/2 tablespoons soy sauce
1 teaspoon dried basil
1 teaspoon dried oregano
1 tablesppon minced garlic
Fresh ground pepper
Red bell peppers (if desired)
Instructions
Place mushrooms smooth side up in shallow dish. Whisk together balsamic vinegar, olive oil, soy sauce, basil, oregano, garlic and black pepper. Pour over mushrooms and let stand at room temperature for 15 minutes, turning them over 2 to 3 times. If using red peppers, slice in quarters and add to marinade.Preheat grill to medium high. Brush the grate with olive oil. Remove mushrooms from marinade and place on grill. Reserve marinade. Brush a little olive oil on buns and toast alongside mushrooms. Gill mushrooms 5-8 minutes on each side, brushing frequently with marinade.
Place muhroom on bun along with lettuce and feta cheese, if desired.
