Farfelle with Pesto and Tomatoes
Ingredients
3 cups fresh basil leaves1/2 cup plus 2 tablespoons olive oil
1/3 cup pine nuts
3 large cloves garlic
1-1/4 cups parmesan cheese
1-1/2 pound farfelle (bow-tie) pasta
3 cups diced tomatoes, seeds removed
Instructions
Chop garlic. Combine with basil, 1/2 cup olive oil and pine nuts in food processor. Blend until smooth. Transfer to small bowl. Mix in 3/4 cup parmesan. Seasonwith salt and pepper. If preparing in advance pour enough olive oil over pesta to cover surface. Cover bowl. Chill. Remove top layer of oil before using.Cook pasta in large pot of boiling, salted water. Drain, reserving 1/2 cup cooking liquid. Return pasta to pot. Add 1 cup pesto and reserved liquid and toss to blend. Mix in tomatoes. Season with salt and pepper.
Transfer to serving bowl. Spring with remaining 1/2 cup cheese. Garnish with basil leaves.
