Ingredients
1 tablelspoon oil1 chopped onion
1 tablespoon chopped garlic
1 diced red pepper
1 (16 oz) can black beans
1/4 cup white vinegar
5-10 drops tabasco
1/4 cup cilantro
3 cups cooked brown rice
Salt and pepper
Instructions
Broil red pepper until skin blackens. Cool 10-15 minutes wrapped in wet towel. Remove skins and slice thin.In large saute pan heat oil over medium-high heat until hot. Add onions and saute until transparent, 5-7 minutes. Add garlic and red pepper and saute, stirring, for an additional 2 minutes. Add black beans, vinegar and tabasco. Bring mixture to boil, reduce heat to low, cover, and simmer 5 minutes. Add cilantro and rice. Mix well. Season to taste.
