Scallops and Bay Shrimp Fettucini with Parmesan Cream
Ingredients
1/2 pound fresh fettucini2 tablespoons butter
4 teaspoons finely minced garlic
2 teaspoons minced shallots
1-1/3 cup cream
1 cup fresh grated parmesan
4 oundes fresh scallops
4 ounces fresh shrimp
1 tablespoon parsley
Instructions
Cook pasta al dente, rinse in cold water, drain and reserve.Melt butter in saute pan over medium heat. Add garlic and shallots and cook until softened.
Add cream and parmesan and cook over high heat for 1 minute to reduce. Add scallops and continue to cook 1 minute. Add pasta and shrimp and toss to blend. Cook and additional 1-2 minutes to heat thoroughly.
Serve with parsley and pass extra parmesan.
