Ham and Bean Soup
Ingredients
1 Tablespoons oil1 onion, chopped
2 carrots, diced
2 stalks celery, diced
2 cloves garlic, chopped
1 teaspoon thyme, chopped
6 cups broth (ham, chicken)
1 pound dried white beans, soaked over night in water
1 ham bone (or 2 ham hocks)
salt, pepper to taste
2 cups diced cooked ham
Instructions
Heat oil over medium-high heat. Add onion, carrots and celery and cook until tender about 7-10 minutes.Add garlic, thyme and cook until fragrant, about a minute.
Add broth, white beans and ham bone/ham hocks.. Bring to boil, reduce heat and let simmer, covered, until beans are tender, about 1-2 hours.
Remove bone/ham hocks. If using ham hocks, strip mean and dice or shred.
Optionally puree some or all of the soup with a hand blender. Add the ham and season with salt and pepper.
