Quick and Easy Enchiladas

Ingredients

1 package Delimex Chicken Quesadillas (available at Wal-Mart in the frozen foods)
1 cup chicken broth
4 oz sour cream
butter
1/2 onion minced (or shallot)
Shredded Colby-Jack Cheese

Instructions

Warm oven according to taquito directions.
1. Melt butter in skillet and saute' onions.
2. Add some flour and brown just a bit.
3. Add chicken broth and stir.
4. Stir in sour cream and this should help thicken the mixture.
5. Place taquitos in baking dish and pour sour cream sauce over it and
sprinkle some colby-jack cheese on top.
6. Cook according to direction on taquito package.

Variation:
Use Beef Taquitos (I like using flour tortilla based taquitos.) and cover with canned chili and enchilada sauce and cheese.

Reader tip from Monica:
This is our favorite, but we use cheater sauce!

Cheater Sauce
1 small container of sour cream
1 can cream of chicken soup
Salsa Verde ( I use Pace Salsa Verde)

Directions:
get a pot.
dump in the sour cream and cream of chicken soup
put in enough salsa verde to your liking.
cook till well blended.
