Mrs. Bozian's Dolmas


1 1/2 lb. ground lamb
1/2 lb. ground stew meat
2 1/2 c. long grain rice (raw)
1/2 bunch chopped parsley
1 lg. can tomatoes drained and chopped
1tbs. salt
1/2 tsp. pepper
4 onions chopped
1/2 doz. fresh mint leaves minced
2/3 c. fresh lemon juice
2 small cans tomato sauce
Vegetables cleaned and cored for stuffing
1 head cabbage cored and leaves dropped into simmering water to soften (for stuffing)
zucchinis (for stuffing)
red peppers (for stuffing)
fresh tomatoes (for stuffing)


Mix together meat, rice, parsley, tomatoes, salt and pepper, onions and mint. Lightly stuff meat mixture into vegetables. Invert plate on bottom of lg. stock pot and start layering stuffed vegetables. Pour tomato sauce over vegetables. Put another plate on top of vegetables to weight down and add just enough water or chicken broth to cover vegetables. Simmer 20 min. remove top plate and add lemon juice. Simmer another 20. min or until rice is done.
