Lentil soup vegetarian


2 cups lentils rinsed
1 onion chopped (sprinkled with sugar)
2 stalks celery chopped
1 red pepper chopped
3 cloves garlic chopped fine
1 1/2 c. butternut squash peeled & cubed
2 red potatoes cubed
3 carrots chopped
juice of 1/2 lemon
1 bunch cilantro chopped
Kaiulani exotic curry spice blend
Chicken broth
olive oil
3 tbs. organic butter
ground red pepper and black pepper (optional)
1 bunch fresh cilantro chopped


Saute onion, celery, red pepper, carrots and red potatoes in olive oil add garlic and butternut squash along with curry spice blend and butter. Add lentils and broth along with lemon juice and red and black peppers. Simmer til lentils are softened. Stir in chopped cilantro last 10 minutes.
