Key Lime Pie

Ingredients

crust:
24 graham crackers crushed
1/3 cup sugar
1 stick butter melted

filling:
2 (14oz) cans sweetened condensed milk
Zest of lime
4 large egg yolks
3/4 cup combined Lime juice and /or Meyer Lemon juice
I used 1/2 cup Lime and 1/4 cup Meyer Lemon or to taste.


topping:
16 oz sour cream
1 Tbs. vanilla and 1Tbs. Coconut Extract
1/2 c. or more sugar (make pretty sweet)

Instructions

Preheat oven to 350
Whisk attachment on mixer.
Mix ingredients for crust together with fork and press lightly into 9" pie plate. Set aside
Whisk together sweetened condensed milk and eggs until well blended add lime /lemon juice blend well. Stir in zest by hand. Let sit for 10 minutes or so and it will thicken. Pour into crust and bake for 18-20 remove from oven let cool 30 min. add thin layer of sour cream topping return to oven for 10 min. Chill overnight before serving.
If using individual pie plates cut all times in half and pre bake pie crust for 5 minutes before adding batter.
