Popover Pancake


1/2 cup whole milk or half & half
2 eggs
1 tsp. vanilla
1/2 cup flour
1 1/2 tsp. sugar
pinch of salt
pinch of baking powder (optional)
1/2 stick butter
powdered sugar
lemon juice (fresh)


Preheat 400 degree oven
Place an oven proof skillet or pie plate into oven to heat.
Mix together milk, eggs and vanilla add flour, sugar, salt and baking powder just until blended. Don't over beat. Before pouring into skillet place butter in pan to melt (don't let burn) then add batter. Bake in a 400 degree oven for twenty minutes. Pancake will be puffy. Sprinkle with lemon juice and powdered sugar and serve. Makes one large pancake.

Notes: Recipe can be doubled for two pancakes.
May be made in jumbo muffin tins for individual pancakes divide butter into 8 pats 1 per muffin cup. One recipe makes 8 muffin size pancakes reduce baking time to 10-11 min.
