3 Grain Buttermilk Cornbread
This is probably the best cornbread recipe I have ever prepared. Must be the wheat flour that gives it the unique taste, but it eats more like cake than it does cornbread.
Ingredients
1/2 cup butter
1/2 cup sugar
2 eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup cornmeal
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1/2 teaspoon salt
Instructions
Preheat oven to 375 F and grease an 8-inch square pan. Melt butter in a large microwavable bowl. Remove from microwave and stir in sugar. Add eggs to the mixture and stir until well blended. Combine buttermilk and baking soda with the batter. Stir in cornmeal, flours, and salt until well blended. Pour batter into prepared pan. Bake for 30 minutes or until lightly browned and a toothpick inserted in center comes out clean. Makes 9 servings.
