Oatmeal Banana Muffins
Any flavor of jam should work for the topping. We used strawberry the first time, cautious about using anything else to pair with the banana flavor of the muffin. We may use peanut butter next time. This recipe is designed to make 12 muffins, but you may get anywhere from 14 to 16.

Ingredients

1 1/4 cup oats
1/2 cup yogurt
1/2 cup milk
1 1/2 cup flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup brown sugar
1/3 cup oil
2 bananas, mashed
1 egg, lightly beaten
4 ounces cream cheese, softened
4 tablespoons jam
2 tablespoons honey

Instructions

Preheat oven to 350 F and grease a 12 cup muffin tin. In a large bowl, mix together oats, yogurt, and milk, and then allow to soak for 10 minutes. In a separate bowl, mix flour, baking powder, baking soda, cinnamon, and nutmeg. Add brown sugar, oil, bananas, and egg to oat mixture, mixing well. Add dry ingredients to oat mixture and mix thoroughly. Fill prepared muffin tins 2/3 full and bake for 20 to 22 minutes. For the icing, combine cream cheese, jam, and honey. Spread frosting on cool muffins. Makes 12 muffins.
