Beetroot dip
This is a recipe I have been working on for years. We love the some of the beetroot dips we get at the supermarket, but they are expensive and a luxury item that comes in a small packet. The ingredients are simple though, a good beetroot dip should be easy to make! However, the solution has eluded me thus far, my results so far are only average, but watch this space.

Ingredients

3 beetroots
yogurt
olive oil
garlic
chili
cumin
coriander

Instructions

Cook the beetroot in the oven wrapped in foil until a fork will easily go through it.

Process the beetroot with the garlic and chili to a fine, dip like consistency.

Add the cumin, coriander, olive and yogurt and blend well.

Serve chilled.
