Pickled Red Onion

Ingredients

1 pound red onions (2 medium or 1 large), thinly sliced
1-1/2 cups wite vineger
1/2 cup sugar
1/2 cinnamon stick
5 cloves
1 bay leaf
1 star anise
Dash red pepper flakes

Instructions

Blanch red onion in suacepan of boiling water for 2 minutes. Drain in colander.

In separate saucepan combine the vinegar, sugar and spices. Bring to boil, reduce heat and simmer, covered for 5 minutes.

Add blanched, drained onions to vinegar mixture. Simmer for 1 minute.

Transfer to glass jar. Allow to sand until cooled. Will keep for several weeks refrigerated.

Makes 1-1/2 pint.
