This is another one of my Southern food discoveries. I started work in the circulation department at Furniture/Today newspaper in September 1983 in High Point, NC. (Where else would a furniture newspaper be located?) There I met my southern co-worker Leigh Chastain. She brought these cookies to work and I knew we would be friends for life! Her family made them in rings (hence the name) but I find I have less breakage when I make them in a full cookie shape.

Ingredients

2 1/2 Sticks Butter
10 oz Sharp Cheddar Cheese - grated
1/2 tsp Cayenne Pepper
1/2 tsp Salt
2 1/2 Cups Flour

Instructions

Bring butter and cheese to room temperature. Cream with electric mixer. Sift dry ingredients together then add to mixture. Blend well.

With a pastry bag, pipe dough into rings on ungreased cookie sheet. (I use a cookie press with the star disc.)

Bake @ 375° for 10 minutes. Do not overcook. Cookies should be pale in color. Remove from cookie sheet onto paper towels. Store in airtight container after they are cold. Makes about 9 dozen cookies.
