Pizzelle

Ingredients

1 Cup Margarine (or butter), melted and cooled
1 1/3 Cups Sugar
6 Eggs
1 Tablespoon baking powder
4 teaspoons vanilla OR 1 Tablespoon anise (1 teaspoon if anise oil)
3 1/2 to 4 Cups Flour

Instructions

Beat eggs on high speed of mixer until foamy. Slowly add sugar - then cooled margarine/butter. Add vanilla or anise, flour, and baking powder. (This is a soft dough.)

Heat pizzelle iron and add about a rounded teaspoon of dough (small size is better). Cook according your iron's directions (anywhere from 20 seconds to 2 minutes.)

Lay flat on cloth until cool.
NOTE: Brush oil on iron for the first pizzelle. Don't need after that.
