Gourmet Game Hens

Ingredients

3/4 cup butter
3/4 white port wine
3 Tbsp dried tarragon, divided
6 garlic cloves
1 1/2 tsp salt, divided
3/4 tsp pepper, divided
Garlic powder
6 cornish hens

Instructions

Melt butter in sauce pan.
Add wine and 1 Tbsp tarragon.
Put hens in large, shallow pan without a rack.
Place 1 garlic clove, 1 tsp tarragon, 1/4 tsp salt, and 1/8 tsp pepper in each hen.
Sprinkle outsides liberally with garlic powder.
Pour wine sauce over hens.
Roast at 400 for 1 hour, basting frequently with sauce.
