Pepperoni Penne Carbonara

Ingredients

3 cups cooked penne pasta
2 cups chopped sun-dried tomatoes (not packed in oil - or just rinse the oil off)
3 cups boiling water
1/4 cup butter
1/2 tsp minced garlic
1 cup sliced pepperoni
1 cup shredded parmesan cheese
1 cup heavy whipping cream
3 Tblsp miced fresh basil
1/2 tsp salt
1/4 tsp pepper

Instructions

Cook pasta according to pkg directions.
Soak tomatoes in boiling water for 10 minutes, and drain.
Saute tomatoes in butter for 3 minutes.
Add garlic, and cook 1 minute longer.
Stir in pepperoni, cheese, cream, basil, salt, and pepper.
Cook over low heat for 3 minutes, or until heated through.
Drain penne, and toss with sauce.
